  • 1 cup bell peppers sliced, mix colors for visual appeal
  • 1 cup broccoli florets fresh or frozen
  • 1 cup carrots thinly sliced or julienned
  • 2 tablespoons green onions chopped finely for garnish
For the Sauce
  • 3 cloves garlic minced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil drizzled at the end
  • 1 tablespoon cornstarch to thicken the sauce

Preparation
  1. Wash and chop all vegetables into bite-sized pieces. Slice bell peppers and carrots thinly, and separate broccoli into florets.
  2. Set everything aside in individual bowls for easy access during cooking.
Cooking
  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat for about 2 minutes.
  2. Add ground beef, breaking it up with a spatula, and cook for 5 to 7 minutes until browned.
  3. Drain excess fat to keep the dish lighter.
  4. Add bell peppers, broccoli, and carrots to the skillet, stir-frying for 5 to 7 minutes until tender.
  5. Introduce minced garlic, soy sauce, and sesame oil, sprinkling cornstarch over the mixture.
  6. Cook for another 2-3 minutes while stirring to combine.
  7. Fold in chopped green onions just before serving.
  8. Plate the stir fry over rice or noodles.
