  • Mixed Greens Baby spinach, arugula, or spring mix.
  • 1 cup Cherry Tomatoes Halved for easier eating.
  • 1 medium Red Onion Thinly sliced.
  • 1/2 cup Kalamata Olives Or green olives.
  • 2 tbsp Capers Drained.
  • 1 cup Feta Cheese Can swap with goat cheese.
  • 1/4 cup Toasted Pine Nuts Substitute with walnuts or sunflower seeds.
For the Vinaigrette
  • 1/4 cup Olive Oil Use high-quality extra virgin.
  • 2 tbsp Apple Cider Vinegar Red wine vinegar also works.
  • 2 tbsp Lemon Juice Use freshly squeezed.
  • 2 cloves Garlic Minced finely.
  • 1 tsp Thyme Fresh or dried.
  • 1 tsp Parsley Fresh or dried.
  • 1 tsp Basil Fresh or dried.
  • Kosher Salt To taste.
  • Black Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Make the Vinaigrette: In a blender, combine olive oil, apple cider vinegar, lemon juice, minced garlic, thyme, parsley, and basil. Season with salt and pepper to taste. Blend until smooth and creamy.
  2. Prep the Salad: In serving bowls, distribute mixed greens and top with cherry tomatoes, red onion, kalamata olives, capers, feta cheese, and pine nuts.
  3. Preheat Grill: Heat your grill to high, around 450°F. Allow 10-15 minutes for the grill grates to become hot.
  4. Prepare the Steak: Let the steak come to room temperature for 15-20 minutes. Brush lightly with olive oil and season with salt and pepper.
  5. Grill Steak: Place the steak on the grill, cooking for 3-5 minutes on each side for medium-rare.
  6. Rest the Steak: Remove the steak from the grill and tent with aluminum foil. Allow to rest for 5 minutes.
  7. Assemble Salad: Thinly slice the grilled steak against the grain and lay over the salad. Drizzle with vinaigrette.
