For the Meatloaf
  • 1 lb Ground Chicken Can substitute with ground turkey or lean pork.
  • 1 cup Parmesan Cheese Romano cheese can be used as an alternative.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be swapped.
  • 2 Eggs For binding.
  • 4 cloves Minced Garlic Adjust according to taste.
  • 1 tsp Garlic Powder Optional.
  • 1 tsp Onion Powder Optional.
  • 1 tbsp Dried Basil
  • 1 tbsp Dried Parsley
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 1/2 cup Whole Milk Plant-based milk is a dairy-free option.
For the Glaze
  • 2 tbsp Unsalted Butter Can be replaced with olive oil.
  • 1/4 cup Additional Parmesan Cheese
  • 2 tbsp Fresh Parsley Finely chopped for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 190°C (375°F) and prepare a lined baking sheet or lightly greased loaf pan.
  2. In a large mixing bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried herbs, salt, black pepper, and whole milk. Mix gently until combined.
  3. Transfer the mixture to your prepared baking surface and shape into a loaf.
  4. Bake for about 40-45 minutes until the internal temperature reaches 74°C (165°F) and the meatloaf is browned.
  5. While baking, melt the unsalted butter in a small saucepan over low heat. Add minced garlic and sauté for 1-2 minutes, then mix in additional Parmesan cheese and chopped parsley.
  6. Carefully brush the glaze over the meatloaf and return it to the oven for an additional 5-7 minutes.
  7. Remove from the oven and let it rest for 5 minutes before slicing and garnishing with parsley.
