  • 1 cup Granulated and light brown sugar combined
  • 1/2 cup Unsalted butter melted
  • 1/2 cup Vegetable or canola oil
  • 2 large Eggs room temperature
  • 1 cup Buttermilk or milk with lemon juice
  • 1 tbsp Vanilla extract
For the Glaze
  • 1 cup Powdered sugar
  • 2 tbsp Milk or heavy cream to thin glaze

Method
 

Step-by-Step Instructions
  1. Prepare the strawberries by hulling and dicing them, then macerate with granulated sugar for 10-15 minutes.
  2. Preheat the oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it and lining the bottom with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. Sift to eliminate lumps, then set aside.
  4. In another bowl, mix granulated sugar, light brown sugar, melted butter, oil, eggs, buttermilk, and vanilla extract until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until no visible flour remains. Avoid overmixing.
  6. Carefully fold in the floured strawberries into the batter.
  7. Pour the batter into the prepared pan and bake for 55-65 minutes until a skewer comes out with moist crumbs.
  8. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the glaze by mixing powdered sugar and vanilla extract with milk until smooth. Drizzle over cooled bread.
