Method
 

Preparation
  1. Boil water and cook thin rice noodles according to package instructions for 3-5 minutes, then rinse under cold water.
  2. In a bowl, mix peanut butter, hoisin sauce, lime juice, soy sauce, and water, whisking until smooth.
  3. Slice cucumber, shred cabbage, grate or slice carrot, chop red pepper, and gather fresh herbs.
  4. Combine cooled noodles, vegetables, cilantro, and mint in a large bowl, gently tossing to mix.
  5. Drizzle peanut sauce over salad and toss until ingredients are coated.
  6. Serve in bowls, garnished with crushed peanuts if desired.
