- In a large bowl, whisk together 2 eggs, 1 cup of plain or vanilla Greek yogurt, 1 teaspoon of vanilla extract, and ½ cup of milk until smooth and fluffy.
- Gradually add 1 cup of white whole wheat flour, 2 teaspoons of baking powder, ¼ teaspoon of salt, and 1 tablespoon of sugar to the wet mixture. Fold gently until just combined.
- Preheat a non-stick griddle over medium-low heat for about 5 minutes. Coat with olive oil cooking spray.
