  • 30 g rice flour or corn starch

  • 1 jar IXL Strawberry Jam or any smooth jam like apricot, raspberry, or cherry
  • 1 jar IXL Apricot Jam optional
For Dusting

Step-by-Step Instructions for Festive Jam Christmas Biscuits
  1. In a mixing bowl, cream together softened unsalted butter, confectioners’ sugar, and vanilla bean paste until light and fluffy.
  2. Sift together all-purpose flour and rice flour or corn starch into the creamed mixture. Fold until a soft dough forms.
  3. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for 25 minutes until firm.
  4. Preheat oven to 160°C (320°F) and line baking trays with parchment paper.
  5. Roll out each disc of dough to 4mm thickness and cut out circles and star shapes.
  6. Transfer shapes to baking trays and bake for 15 minutes or until firm and pale golden.
  7. Once cooled, spoon jam onto whole biscuits and sandwich with star-shaped biscuits.
