Method
 

Step-by-Step Instructions
  1. Wash 1 cup of fresh strawberries, hull and slice in half.
  2. In a blender, combine strawberries, 2 cups of cottage cheese, 2 tablespoons of honey, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice. Blend until smooth.
  3. Taste the mixture and adjust sweetness if needed; fold in ½ cup of chopped fresh strawberries if desired.
  4. Pour the mixture into a freezer-safe container and smooth out the top.
  5. Cover and freeze for at least 4 hours until firm.
  6. Let ice cream sit at room temperature for 5-10 minutes before serving.
  7. Scoop into bowls or cones and garnish with additional strawberries or chocolate.
