Preparation
- In a medium saucepan, combine 2.25 cups of blueberries, 1 cup of granulated sweetener, 1 cup of filtered water, and 1 teaspoon of lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally until the blueberries burst and the mixture thickens slightly. Strain through a fine mesh sieve into a bowl and set aside to cool.
- Grab a tall glass and fill it generously with ice cubes, leaving space at the top.
- Pour 1/4 cup of the prepared blueberry syrup over the ice in your glass.
- Gently add 1 cup of club soda to the glass, pouring carefully to maintain the bubbles.
- Drizzle 3 tablespoons of half & half over the top of your drink.
- Add a generous dollop of whipped cream on top of your drink.
