  • 2 tbsp Soy Sauce Tamari or coconut aminos for gluten-free options
  • 1 tbsp Rice Wine Vinegar Apple cider vinegar works as a substitute
  • 1 tbsp Sesame Seeds For garnish

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9.5x5 inch loaf pan.
  2. Sauté finely diced onion in vegetable oil until translucent, then add minced garlic and cook until fragrant.
  3. Transfer the onion and garlic mixture into a large bowl, add green onions, gochujang, eggs, and salt. Stir to combine.
  4. In another bowl, mix ground pork and panko bread crumbs. Gently fold in the onion mixture until just incorporated.
  5. Shape the meat mixture into the prepared loaf pan, smoothing the top evenly.
  6. Bake in preheated oven for 40 minutes, aiming for an internal temperature of 140°F (60°C).
  7. In a bowl, whisk together glaze ingredients until smooth while meatloaf bakes.
  8. Brush the glaze over the meatloaf and return to the oven for an additional 10-15 minutes until it reaches 160°F (71°C).
  9. Let the meatloaf rest for 5 minutes before slicing, then garnish with sesame seeds and serve.
