  1. Prepare Marinade: Whisk together low sodium soy sauce, honey, hoisin sauce, sesame oil, ginger, garlic, and sriracha until well combined. Set aside.
  2. Marinate Beef & Mushrooms: Cut steak into 1-inch cubes and add to marinade with mushrooms. Cover and refrigerate for at least 2 hours.
  3. Make BBQ Sauce: In a saucepan, combine hoisin sauce, ketchup, low sodium soy sauce, mirin, sesame oil, and sriracha. Simmer for 5 minutes.
  4. Preheat Grill: Preheat grill to medium-high heat (around 450°F).
  5. Skewer Preparation: Thread marinated beef cubes, mushrooms, and scallions onto soaked bamboo skewers.
