  • 1 pound Salmon fillets Skinless and center-cut
  • 2 tablespoons Olive or sesame oil For searing
  • 1 teaspoon Salt To enhance flavor
  • 1 teaspoon Black pepper For seasoning
  • 1 tablespoon Lime zest For brightness
For the Mango-Avocado Salsa
  • 1 cup Mango Ripe, like Ataulfo
  • 1 large Avocado Diced or mashed
  • 2 tablespoons Lime juice For acidity
  • 1 pinch Salt To enhance flavors
For Serving
  • 1 cup Microgreens Fresh base for serving
  • 2 tablespoons Black sesame seeds For garnish
  • 1 lime Lime wedges For serving

Method
 

Preparation
  1. Cut the salmon fillets into bite-sized cubes and pat dry with a paper towel.
  2. Drizzle the salmon cubes with olive oil and season with salt, pepper, and lime zest.
Cooking
  1. Heat a large skillet over medium-high heat for about 2 minutes until hot.
  2. Add oil to the skillet, then add the seasoned salmon cubes and sear for 2–3 minutes on each side.
  3. Transfer cooked salmon bites to a plate and let them rest.
Salsa Preparation
  1. In a mixing bowl, combine diced mango and avocado.
  2. Squeeze in fresh lime juice and add a pinch of salt, mixing gently.
Assembly
  1. Layer microgreens in a serving bowl, then add seared salmon bites and mango-avocado salsa.
  2. Garnish with lime wedges and black sesame seeds before serving.
