- Begin by toasting your chosen bread slices in a toaster or on a skillet over medium heat until golden brown and crisp, about 2-4 minutes.
- Generously spread half of the hummus on one side of each slice of toasted bread.
- Sprinkle half of the vegan feta crumbles on top of the hummus on one slice of bread.
- Begin layering your fresh vegetables atop the feta, starting with green leaf lettuce, then 2-3 slices of juicy tomatoes, thinly sliced red onion, roasted red peppers, and five cucumber slices.
- Sprinkle the remaining feta over the top for added flavor.
- Carefully place the second slice of toasted bread on top, hummus side down, to create a sandwich.
