Ingredients
  

For the Shrimp
  • 1 lb peeled and deveined shrimp wild-caught is preferred
  • 2 cloves garlic minced
  • 1/2 tsp cayenne pepper adjust to your preference
  • 1/2 tsp paprika for added flavor
  • to taste salt
  • to taste black pepper
For the Grits
  • 1 cup quick-cooking grits regular can be used but take longer
  • 4 cups chicken broth vegetable broth can be used for vegetarian
  • 1 cup shredded cheddar cheese dairy-free can be used
  • 2 tbsp butter
For Garnishing
  • 4 oz bacon can substitute with turkey bacon
  • 2 tbsp green onions chopped

Method
 

Cooking Instructions
  1. In a medium saucepan, bring 4 cups of chicken broth to a boil over medium-high heat. Slowly stir in 1 cup of quick-cooking grits, reduce the heat to low, and cook for 5-7 minutes until creamy.
  2. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted and creamy. Keep warm.
  3. In a large skillet, cook 4 oz of diced bacon over medium heat until crispy, about 5-7 minutes. Transfer bacon to a plate lined with paper towels.
  4. Add 2 minced garlic cloves to the bacon drippings in the skillet and sauté for about 1 minute until fragrant.
  5. Add 1 lb of shrimp, season with cayenne, paprika, salt, and pepper, and cook for 3-4 minutes until shrimp are pink and opaque.
  6. Stir in 2 tbsp of butter until melted, then combine everything.
  7. Spoon creamy grits into bowls, top with shrimp mixture and crispy bacon, then garnish with green onions.
