  • 1 medium Red Bell Pepper cut into chunks
  • 1 medium Yellow Bell Pepper cut into chunks
  • 1 cup Cherry Tomatoes rinsed and dried
For the Marinade
  • 1 Juice of Lemon freshly squeezed
  • 1 tsp Lemon Zest
  • 2 tbsp Olive Oil preferably extra virgin
  • 1 tbsp Fresh Thyme or dried
  • to taste Salt
  • to taste Pepper
  • 4 Skewers wooden or metal

Preparation Steps
  1. Soak wooden skewers in water for at least 30 minutes.

  5. Cut the red and yellow bell peppers into chunks similar in size to the halloumi cubes.
