Preparation
  1. Begin by gently separating the enoki mushrooms into small bunches and wrap each bundle tightly with a slice of thinly sliced beef.
  2. In a mixing bowl, whisk together the dashi broth, mirin, soy sauce, sugar, and black pepper until well combined.
  3. Heat olive oil in a large skillet over medium heat and sauté the sliced yellow onions until caramelized.
  4. Place the Enoki Beef Rolls in the skillet, drizzle with the sauce, cover, and cook for 3 minutes. Flip and cook for an additional 1-2 minutes.
  5. Scramble large eggs in a bowl, then drizzle over the beef rolls. Let cook for about 2 minutes until just set.
  6. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
