- In a large mixing bowl, combine the old-fashioned rolled oats, milk, eggs, cinnamon, and maple syrup. Whisk thoroughly to mix.
- Gently fold in the chopped apples and any optional nuts without overmixing.
- Spoon the mixture into each muffin cup, filling them just to the top and distributing the apples evenly.
- Sprinkle coarse sugar over each oatmeal cup if desired before baking.
- Bake for 28-30 minutes or until the edges turn golden brown, watching for them to not brown too quickly.
- Remove from oven and let cool in the pan for 5-10 minutes before serving.
