Preparation Steps
  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and a bit of sugar until wet sand texture. Press into 9-inch springform pan. Bake for 10 minutes until lightly golden.
  2. In a medium saucepan, combine fresh strawberries with sugar over medium heat. Cook for 5-7 minutes until softened and juices released. Mash and let cool.
  3. Beat cream cheese with granulated sugar until smooth. Gradually mix in sour cream, eggs, and vanilla just until combined.
  4. Pour half of cheesecake filling over crust. Add dollops of strawberry sauce and swirl. Pour remaining filling and add more sauce on top. Swirl gently.
  5. Place springform pan in larger baking dish with hot water. Bake at 325°F (162°C) for 55-60 minutes until edges are set and center jiggles slightly.
  6. Turn off oven and crack door for gradual cooling for an hour. Refrigerate for at least 4 hours or overnight before serving.
