Preparation Steps
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and a bit of sugar until wet sand texture. Press into 9-inch springform pan. Bake for 10 minutes until lightly golden.
- In a medium saucepan, combine fresh strawberries with sugar over medium heat. Cook for 5-7 minutes until softened and juices released. Mash and let cool.
- Beat cream cheese with granulated sugar until smooth. Gradually mix in sour cream, eggs, and vanilla just until combined.
- Pour half of cheesecake filling over crust. Add dollops of strawberry sauce and swirl. Pour remaining filling and add more sauce on top. Swirl gently.
- Place springform pan in larger baking dish with hot water. Bake at 325°F (162°C) for 55-60 minutes until edges are set and center jiggles slightly.
- Turn off oven and crack door for gradual cooling for an hour. Refrigerate for at least 4 hours or overnight before serving.
