Preparation Steps
  1. Preheat oven to 425°F (220°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey or beef and cook for 5-7 minutes until browned.
  3. Sauté chopped onion and minced garlic for 3-4 minutes until translucent.
  4. Add red bell pepper, corn, and mixed vegetables. Pour in coconut milk and add thyme, paprika, salt, and pepper. Stir and cook for another 5-7 minutes.
  5. Transfer filling to greased 9x13 inch baking dish and spread evenly.
  6. Top with frozen tater tots in a single layer.
  7. Bake for 25-30 minutes until tater tots are golden brown and crispy.
  8. Let cool for a few minutes before serving warm.
