  • 1 large Cucumber peeled if desired
  • 4 cups Spinach preferably baby spinach
For the Dressing
  • 1 cup Greek Yogurt can substitute with regular yogurt or sour cream
  • 2 tablespoons Lemon Juice freshly squeezed
  • 2 tablespoons Olive Oil
  • to taste Salt
  • to taste Pepper
  • optional Chili Flakes for a hint of spice
For Serving
  • 4 slices Bread whole grain recommended; toasted

Method
 

Preparation Steps
  1. Rinse the cucumber under cold water and peel if desired. Slice into 1/8-inch rounds and place in a mixing bowl.
  2. Chop the spinach into bite-sized pieces and add to the bowl with the cucumber.
  3. In a separate bowl, whisk Greek yogurt, lemon juice, and olive oil until smooth. Season with salt and pepper, and add chili flakes if desired.
  4. Toast the bread slices in a toaster or on a skillet for about 2 minutes until golden brown.
  5. Toss the cucumber and spinach with the dressing until evenly coated.
  6. Spread the salad generously on top of the toasted bread slices and serve immediately.
