Method
 

Cooking Instructions
  1. Start by patting the chicken pieces dry with paper towels and season with salt and black pepper. Allow to rest for 10 minutes.
  2. In a mixing bowl, blend cornstarch and flour. Dredge the chicken pieces in this mixture until coated.
  3. Heat oil in a Dutch oven to 350°F. First fry chicken pieces for 3-4 minutes until lightly golden.
  4. Whisk soy sauce, rice vinegar, brown sugar, honey, ginger, and garlic in a saucepan. Simmer for 5 minutes.
  5. Mix cornstarch with water until smooth and stir into the simmering sauce. Cook for 2-3 minutes to thicken.
  6. Increase oil temperature to 375°F. Second fry chicken for 2-3 minutes until golden brown and crispy.
  7. Combine the fried chicken with the sauce in a bowl, tossing until evenly coated. Serve warm.
