Step-by-Step Instructions
  1. Prepare the Baja Sauce by combining Mexican crema, adobo sauce, and the zest and juice of lime. Whisk until smooth and set aside.
  2. Prep oil in a skillet, heating to 350°F. Season cod fillets with salt and black pepper.
  3. Make the Batter by whisking flour, cornstarch, salt, and pepper. Slowly add beer until smooth, then set aside.
  4. Fry the fish in batches for 4-5 minutes until golden brown and crispy. Drain on a cooling rack.
  5. Assemble the tacos with tortillas, Baja sauce, crispy fish, shredded cabbage, pico de gallo, and lime wedges.
