Step‑by‑Step Instructions
  1. Sauté the Aromatics: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent.
  2. Add Vegetables and Garlic: Stir in the minced garlic, diced carrots, and celery. Sauté for another 3-4 minutes until vegetables are tender.
  3. Incorporate the Potatoes: Add the cubed potatoes and 4 cups of fish or chicken broth. Bring to a gentle simmer and cook for about 15 minutes until fork-tender.
  4. Mix in Cream and Seasonings: Lower heat and stir in 1 cup of heavy cream and 1 cup of whole milk. Add 1 teaspoon of dried thyme, 1 teaspoon of Old Bay seasoning, and salt and pepper to taste.
  5. Add the Seafood: Gently fold in the mixed seafood and cook for an additional 5-7 minutes until opaque.
  6. Final Taste Adjustments and Serve: Taste and adjust seasoning as needed. Serve warm, garnished with chopped parsley.
