- Preheat your oven to 375°F (190°C) and place rack in the middle position.
- Peel and slice the sweet potatoes into rounds, about ⅛ to ¼ inch thick.
- In a saucepan, combine cream, milk, melted butter, brown sugar, cinnamon, nutmeg, salt, and vanilla. Heat gently for about 5 minutes until smooth.
- Layer sweet potato slices in a greased baking dish, pouring creamy sauce in between layers.
- Cover with aluminum foil and bake for 30–35 minutes until sweet potatoes are soft.
- Remove foil and bake for an additional 20–25 minutes until the top is bubbly and golden.
- Sprinkle mini marshmallows on top and broil for 2–3 minutes until toasted.
- Let dish rest for about 10 minutes before serving.
