Step-by-Step Instructions
  1. Cut the chicken into thin strips and season with sea salt and ground pepper.
  2. In a large skillet, melt butter over medium-high heat. Add chicken and cook for about 8 minutes until golden brown.
  3. Transfer browned chicken to a plate and cover with foil.
  4. Lower heat, sauté diced onion for about 3 minutes until softened, then add minced garlic.
  5. Pour in chicken stock and add roasted red peppers. Simmer for about 5 minutes.
  6. Stir in heavy cream and Parmesan cheese until melted and creamy.
  7. Return chicken to skillet, add Italian seasoning and pepperoncini. Cook together for 3 to 5 minutes.
  8. Serve over rice, pasta, or vegetables.
