- Prepare the Crockpot by spraying it with non-stick cooking spray.
- Layer the chicken thighs at the bottom of the crockpot.
- Chop the Yukon Gold or red potatoes into evenly sized pieces and layer on top of the chicken.

- Pour chicken broth over the entire mixture.
- Cover the crockpot and set it to cook on low for 6 hours.
- Once done, serve warm and optionally garnish with fresh herbs.
