- Wash, peel, and dice onions, carrots, and potatoes into even pieces. Heat a skillet over medium; add butter, sauté onions and garlic for 3-4 minutes until lightly translucent.
- Add diced carrots and potatoes, along with vegetable broth. Simmer for 10-12 minutes until vegetables are tender. Sprinkle flour over filling, stirring in milk until smooth. Season with thyme, rosemary, salt, and pepper.
- Preheat the oven to 400°F (200°C). Pour the filling into a greased baking dish, cover with pie crust, sealing edges. Make slits on top to allow steam to escape.
- Bake for 25-30 minutes until the crust turns golden brown and filling is bubbling.
