Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. Mash 2-3 overripe bananas until smooth; mix in melted butter until cohesive.
  3. Stir in ¾ cup sugar, 1 beaten egg, and 1 teaspoon vanilla extract until smooth.
  4. Fold in 1 teaspoon baking soda and ¼ teaspoon salt, then gently add 1½ cups of flour until just combined.
  5. Combine ¼ cup sugar with 1 tablespoon ground cinnamon for the swirl.
  6. Pour half of the batter into the loaf pan, smoothing out evenly.
  7. Sprinkle three-quarters of the cinnamon-sugar mixture over the first layer.
  8. Pour the remaining batter over the cinnamon-sugar layer.
  9. Gently swirl through the layers with a butter knife.
  10. Sprinkle the remaining cinnamon-sugar mixture on top of the batter.
  11. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  12. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
