- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- Mash 2-3 overripe bananas until smooth; mix in melted butter until cohesive.
- Stir in ¾ cup sugar, 1 beaten egg, and 1 teaspoon vanilla extract until smooth.
- Fold in 1 teaspoon baking soda and ¼ teaspoon salt, then gently add 1½ cups of flour until just combined.
- Combine ¼ cup sugar with 1 tablespoon ground cinnamon for the swirl.
- Pour half of the batter into the loaf pan, smoothing out evenly.
- Sprinkle three-quarters of the cinnamon-sugar mixture over the first layer.
- Pour the remaining batter over the cinnamon-sugar layer.
- Gently swirl through the layers with a butter knife.
- Sprinkle the remaining cinnamon-sugar mixture on top of the batter.
- Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
