  • 1 teaspoon espresso powder instant coffee can be substituted
  • ½ cup olive oil or melted coconut oil or vegetable oil
  • ½ cup brown sugar light or dark can be used
  • ½ cup granulated sugar reduce for lower-sugar option
  • 2 large eggs or use flax eggs for vegan version
  • 1 teaspoon vanilla extract opt for pure vanilla
  • ½ cup sour cream Greek yogurt is a good substitute
  • 3 medium ripe bananas mashed, overripe is best
  • 1 cup dark chocolate chips can mix with semi-sweet chocolate chips
  • ½ cup semi-sweet chocolate chips
  • ½ cup extra chocolate chips for topping
  • 1 medium banana slices optional decoration

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Whisk together the dry ingredients: flour, cocoa powder, baking soda, salt, and espresso powder.
  3. Mix the wet ingredients: olive oil, brown sugar, granulated sugar, and eggs until smooth.
  4. Add vanilla extract, sour cream, and mashed bananas to the wet mixture and combine.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Dust chocolate chips with flour and fold them into the batter.
  7. Pour the batter into the loaf pan, sprinkle extra chocolate chips and banana slices on top, and bake for 55-65 minutes.
  8. Check for doneness with a toothpick, then let cool in the pan for 20 minutes before transferring to a wire rack.
