Baking Instructions
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- Whisk together the dry ingredients: flour, cocoa powder, baking soda, salt, and espresso powder.
- Mix the wet ingredients: olive oil, brown sugar, granulated sugar, and eggs until smooth.
- Add vanilla extract, sour cream, and mashed bananas to the wet mixture and combine.
- Fold the dry ingredients into the wet mixture until just combined.
- Dust chocolate chips with flour and fold them into the batter.
- Pour the batter into the loaf pan, sprinkle extra chocolate chips and banana slices on top, and bake for 55-65 minutes.
- Check for doneness with a toothpick, then let cool in the pan for 20 minutes before transferring to a wire rack.
