Preparation Steps
- In a large mixing bowl, combine mascarpone cheese and heavy cream. Beat on medium speed for 2–3 minutes until smooth and creamy.
- Add amaretto liqueur, cherry juice, and vanilla extract to the mascarpone mixture and beat for an additional 1–2 minutes.
- Mix granulated sugar and cherry preserves in a separate bowl, then add to the mascarpone mixture and beat for another minute.
- Gently fold in the chopped fresh cherries into the mascarpone mixture.
- In a shallow dish, combine equal parts amaretto and cherry juice for dipping.
- Quickly dip each ladyfinger into the mixture for 1-2 seconds per side.
- Arrange a layer of dipped ladyfingers in a 9x13 inch dish, then spread half of the mascarpone cherry mixture over them.
- Add another layer of dipped ladyfingers and top with the remaining mascarpone cherry mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and sprinkle shaved dark chocolate.
- Cut into squares and serve chilled.
