Ingredients
  

For the Mascarpone Mixture
  • 1 cup Mascarpone Cheese Substitute with cream cheese for a tangier flavor.
  • 1 cup Heavy Cream Enhances the creamy consistency.
  • 1/2 cup Amaretto Liqueur Substitute with almond extract and water for a non-alcoholic version.
  • 1/4 cup Cherry Juice Use fresh or bottled juice.
  • 1 teaspoon Vanilla Extract
For the Cherry Addition
  • 2 cups Fresh Cherries Chopped and pitted.
  • 1/2 cup Cherry Preserves
For the Ladyfingers Base
  • 24 pieces Ladyfingers Ensure quick dipping to avoid sogginess.
For the Finishing Touches
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Cocoa Powder For dusting.
  • 1/4 cup Dark Chocolate Shaved or grated.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine mascarpone cheese and heavy cream. Beat on medium speed for 2–3 minutes until smooth and creamy.
  2. Add amaretto liqueur, cherry juice, and vanilla extract to the mascarpone mixture and beat for an additional 1–2 minutes.
  3. Mix granulated sugar and cherry preserves in a separate bowl, then add to the mascarpone mixture and beat for another minute.
  4. Gently fold in the chopped fresh cherries into the mascarpone mixture.
  5. In a shallow dish, combine equal parts amaretto and cherry juice for dipping.
  6. Quickly dip each ladyfinger into the mixture for 1-2 seconds per side.
  7. Arrange a layer of dipped ladyfingers in a 9x13 inch dish, then spread half of the mascarpone cherry mixture over them.
  8. Add another layer of dipped ladyfingers and top with the remaining mascarpone cherry mixture.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust with cocoa powder and sprinkle shaved dark chocolate.
  11. Cut into squares and serve chilled.
