Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing a muffin tin.
  2. Steam or microwave the cauliflower florets until they are tender, about 5–7 minutes. Cool slightly and pulse in a food processor until rice-like.
  3. In a large bowl, mix the riced cauliflower with shredded cheese, the egg, and optional seasonings. Stir until well combined.
  4. Scoop tablespoon-sized portions of the mixture and shape into round bites. Arrange them on the baking sheet or mini muffin tin.
  5. Lightly spray the formed bites with olive oil and bake for 20-25 minutes, flipping halfway through.
  6. Once baked, let them cool for 5 minutes and serve warm with your choice of dipping sauces.
