- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing a muffin tin.
- Steam or microwave the cauliflower florets until they are tender, about 5–7 minutes. Cool slightly and pulse in a food processor until rice-like.
- In a large bowl, mix the riced cauliflower with shredded cheese, the egg, and optional seasonings. Stir until well combined.
- Scoop tablespoon-sized portions of the mixture and shape into round bites. Arrange them on the baking sheet or mini muffin tin.
- Lightly spray the formed bites with olive oil and bake for 20-25 minutes, flipping halfway through.
