  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Fresh Chopped Basil
For the Finishing Touch
  • 2 tablespoons Bottled Balsamic Glaze or homemade reduction

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
  2. Arrange the trimmed asparagus on one side of the baking sheet and halved cherry tomatoes on the other side.
  3. Drizzle olive oil over the asparagus and tomatoes, then sprinkle with kosher salt and black pepper. Toss gently.
  4. Roast in the oven for about 10 minutes, until asparagus is bright green and tomatoes soften.
  5. Remove from the oven and sprinkle shredded mozzarella cheese over the asparagus.
  6. Return to the oven for an additional 5 minutes until the cheese melts and turns golden.
  7. Transfer to a serving plate, top with roasted cherry tomatoes and fresh basil, and drizzle with balsamic glaze.
