- Preheat oven to 200°C (400°F). Grate zucchini, remove excess moisture, peel and boil sweet potatoes until fork-tender, then mash.
- Combine grated zucchini, cooled mashed sweet potato, and coconut flour in a large mixing bowl. Add optional seasonings and mix well.
- Shape mixture into small tot-like forms and place on a parchment-lined baking sheet with space in between each.
- Bake for 30-35 minutes or until golden brown and crispy, flipping halfway through.
- Allow to cool for a few minutes before serving with dipping sauce.
