  • 1/4 cup Parmigiano Cheese Shaved for garnish
For the Salad Dressing
  • 2 tbsp Olive Oil Extra virgin recommended
  • 1 tbsp Lemon Juice Freshly squeezed for best taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry until large enough for the baking sheet. Trim edges and score a border.
  3. Whisk one egg with a tablespoon of water to create an egg wash and coat the pastry. Sprinkle with seasoning.
  4. Bake the pastry in the preheated oven for 10 minutes until lightly golden.
  5. Spread Boursin cheese over the baked pastry and crack eggs on top, sprinkling with salt.
  6. Return to the oven and bake for an additional 12-14 minutes until egg whites set and pastry is golden.
  7. Prepare the arugula salad with olive oil, lemon juice, and salt in a bowl.
  8. Allow the tart to cool slightly, top with green onions, crispy prosciutto, and arugula salad, and finish with Parmigiano cheese.
