  • 1 side Salmon Any medium-cut salmon fillet can be used.
For the Cranberry Sauce
  • 2 cups Fresh Cranberries Frozen cranberries can be used if fresh are unavailable.
  • 0.5 cups Maple Syrup Substitute with honey for a different taste.
  • 0.5 cups Water

Method
 

Preparation Steps
  1. Preheat your oven to 200°C (390°F) and grease your baking dish with oil.
  2. Combine fresh cranberries, maple syrup, and water in a medium pot. Add a pinch of salt and simmer over medium heat.
  3. After 3-5 minutes, mash the softened cranberries with a fork and continue simmering for 5 minutes until thickened.
  4. Place the salmon skin-side down in the baking dish and cover with cranberry sauce.
  5. Bake the salmon for approximately 20 minutes until it flakes easily and reaches 62°C (145°F).
  6. Let the salmon rest for a few minutes before serving with cranberry sauce.
