Ingredients

For the Beef Mixture
  • 2 pounds Ground Beef Use an 80/20 lean-to-fat ratio for juicy results.
  • 1 cup Saltine Crackers Acts as a binder; substitute with breadcrumbs if you’re out.
  • 1 cup Milk Adds moisture; buttermilk works for a tangy flavor.
  • 1 tablespoon Italian Herbs Introduces aromatic flavor; swap with oregano and basil if needed.
  • 1 teaspoon Onion Powder Enhances savory depth; fresh onion can be used instead.
  • 1 teaspoon Garlic Powder Adds warmth; substitute with fresh minced garlic for a brighter taste.
  • 1/2 teaspoon Cayenne Pepper Optional heat; omit if you prefer a milder flavor.
For the Gravy
  • 1/4 cup All-Purpose Flour Coats steaks for browning; try gluten-free flour for a GF option.
  • 1 can Condensed Cream of Mushroom Soup Forms the base of the rich gravy; use cream of celery for a different spin.
  • 1 cup Milk Thins the gravy without sacrificing richness.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine ground beef, crushed saltines, 1 cup of milk, Italian herbs, onion powder, garlic powder, cayenne pepper, and a pinch of salt and pepper. Mix until well combined.
  3. Shape the mixture into about 1/2-inch thick patties. You should have approximately eight patties.
  4. Heat a skillet over medium-high heat, add a little oil, and dredge each patty in all-purpose flour. Brown them for 2 to 3 minutes per side.
  5. Transfer the browned patties to the prepared baking dish in a single layer.
  6. In a separate bowl, whisk together the condensed cream of mushroom soup and remaining milk until smooth. Pour the gravy over the patties evenly.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes.
  8. Let it rest for a few minutes before serving.
