Ingredients
  

Filling
  • 1 pound Shrimp Peeled and deveined
  • 1 cup Shredded Carrots Can substitute with sweet bell peppers
  • 1 cup Bean Sprouts Consider using water chestnuts for extra crunch
  • 2 cups Cabbage Thinly sliced; substitute with any leafy green
  • 2 pieces Green Onions Chopped; shallots can be used instead
  • 1 tablespoon Ginger Grated; ground ginger can be used in a pinch
  • 2 cloves Garlic Minced; garlic powder is an alternative
  • 2 tablespoons Soy Sauce Tamari can be used for gluten-free
  • 1 tablespoon Sesame Oil Olive oil is a lighter substitute
Wrapping
  • 10 pieces Spring Roll Wrappers (Rice or Wheat) Fresh wrappers preferred
  • 1 can Cooking Spray Any variety of cooking oil spray
Seasoning
  • Salt Adjust to taste
  • Pepper Adjust to taste

Method
 

Preparation
  1. In a large bowl, combine peeled and deveined shrimp, shredded carrots, bean sprouts, thinly sliced cabbage, chopped green onions, grated ginger, minced garlic, soy sauce, sesame oil, salt, and pepper. Mix everything thoroughly until well incorporated.
  2. Lay a spring roll wrapper flat on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the shrimp filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, rolling tightly while sealing the top corner with a little water.
  3. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  4. Lightly spray the spring rolls with cooking spray. Place the spring rolls in a single layer in the air fryer basket.
  5. Air fry the spring rolls for 10–12 minutes, flipping them halfway through the cooking time.
  6. After air frying, remove the spring rolls from the basket and allow them to cool slightly before serving.
